Don’t get me wrong my mother and step-father are great cooks but the king of the ring is my grandfather. From the age of 5 we have cooked and baked together! 22 years of teaching came to a peak last year when I cooked Christmas Dinner for my Grandparents for the first time which went down a treat! The left overs were happily consumed by Emily over the next 3 days.


The 1 thing besides the meats was the potatoes that Emily couldn't stop eating, the recipe of which came from my Grandfather himself. There are 2 ways to do the potatoes, simply cut the potatoes into quarters and place them into a bowl. Next, add a lot of oil to make sure they are all covered! Then you need to add slashings of salt, pepper, thyme, oregano, parsley and general mixed herbs to the mix.


 

Now time for the fun part! Place a plate over the top of the of the mixing bowl and shake until everything is covered evenly. Shake it like a polaroid picture!


The second way is to slice 2/3s of the way through like a hassleback and apply the same oil and mixture or herbs.


Bake both for 50 minutes or until crispy brown and enjoy. It doesnt matter what temperature you cook at. The longer you cook for the tastier it gets.


Seriously they go with everything but make sure that they are the first thing that is made for the Sunday roast. The longer the potatoes are soaking in the oil and juices on the side beforr it goes in the oven, the absolute better. Give it a bash and you will never go back.
