Lemon cakes

I can understand why the Queen of the North loves Lemon cakes and as a true Northerner myself I have to try it and now they are my favorite too. I think the best part of the this whole recipe is that I could walk round the house and shout “King of the North” and “Winter is coming” as well as singing “Jenny of Oldstone”



While doing this I noticed a growing confusion in the eyes of my other half. Turns out Emily has never seen Game of Thrones. So with that in mind I began to sing more. When Emily said she had never seen a episode of Game of Thrones the shock was nearly as strong as when I said I had never seen Friends and i didnt understand the phrase "ross fine", then the universe was at peace once again. So I thought I would add my own little twist to this game of Thrones. Sansa’s Lemon cakes, by far one of if not the best homemade desert I have ever been given. Due to the fact that while cooking the cakes you need to eat the remains of the cake it is amazing.



This is the first time a cake was made in this house using buttermilk. Its a standard cake mix but with this added, lemon zest and lemon juice. I added around 225ml of buttermilk. It was whisked up nicely until no lumps and it looks almost batter like. This went into a preheated oven at 180c and was left to cool before we moulded it.


 

While this was cooking we needed to make lemon curd. I dont know about you but i have never made lemon curd in my life! It was surprisingly easy to do. All you need is a egg, sugar and lemon juice. On a small heat you crack a egg, add 100g of sugar and squeeeze the juice out of 1 lemon. On a constant heat you need to balloon whisk the mother out of this. If you stop it will burn snd taste horrendous. At first your arms will hate you and you will wonder if anything is actually doing anything but it will star to get harder like lemon curd does and honestly you will ve proud of yourself. Once you get the right consistantcy its time to have a quick taste check. I added a tiny bit more sugar to make it a wee bit sweeter. You need to transfer this to a bowl, cover it and put it in the fridge to set. This takes around a hour which is plenty of time as you need to cook the cake for 25 mins and then make sure its cooled down.


Once its cold and not sticking to the pan anymore its time to get a cookie cutter. I have a cylinder one which is perfect. I marked out 7 spaces on the cake and cut through. You want to make sure you have even amounts and this cake works best without the rounds of the original cake. We ate the remaining cake. It was gone in like 4 seconds it was THAT good!


Taking the cake we added the lemon curd on top and you dont have to do this but we also added a sugared lemon topping. We took a lemon slice and added it into a sugar water boil for 15 minutes and let it cool. This is just for decoration and non essential as Boris would say.


Put this all together add a wee bit if whipped cream and bobs your uncle its beautiful!


By far the best desert you can make and its quite easy. I would say the several cakes we made last about 2 days, I couldn’t put them down. Every tea break and meal was accompanied by a cake.
