Lemon and Blueberry Baked Oats

Let's start the day off right with this beautiful dish of baked oats. We got this recipe from "Pinch Of Nom - 100 slimming home-style recipes". First of all, we love this book, not only does it have a varied amount of recipes it is broken down easily into breakfast, fakeaway, Quick Meals, Bakes and Roasts and more!
It simply states how "bad" the dish is for you, is it gluten, vegan free and freezable and the recipes are easy to follow which is fab! I think we have been living off this for about a month if not more and we still haven't completed everything in it!
However, the Lemon and Blueberry baked oats is a favourite as its something you can put together the night before or do first thing in the morning whilst you start your day. The smell of the blueberry oozing around the house, you can almost feel your soul waking up.
Mixing all ingredients into the bowl which include: -Oats -Fat Free Yogurt -Vanilla Extract -Sweetener -Grated Zest and juice of a lemon -2 medium eggs and of course..... Blueberries Stir all of this together and place inside an ovenproof dish. You can add some extra blueberries on top of extra yum appeal! This then goes into a hot oven of 200c for 35-40 mins. While it seems like a long time, by the time you have had your coffee, had a shower and put your face on your breakfast is right there waiting for you. This is so simple but it fills you up and sets you right for the day. The smells coming from the kitchen are incredible and even our dog Donut couldn't stop sniffing the air. Overall this dish is a 7/10. It's easy to make and tastes delicious. I was sceptical at first with the yoghurt but it came out creamy and moreish. I would definitely recommend and as Joe would say, "you can stay another week!".
