A healthy cheeseburger pizza? It can't be true!

I never thought I could create a "healthy" cheeseburger pizza, yet I am sat here staring at my 300 calorie meal and I am completely full! This wonderful dish comes from the book Pinch Of Nom. It's so easy to do all I needed was Alexa for some tunes and I was sorted.


Starting off making the meatballs, I had my 5%lean mince, garlic powder, onion powder and some oregano. Mix this all together in a bowl and roll it into little balls, this should make at least 15! At 220c put them in the oven for only 5 minutes! Don't worry we are putting them back in later. When we put them in the oven, make sure with it you put diced peppers and onion. Unfortunately, I ran out of onion so I put mushrooms in instead! Drizzled a smidge of oil and a few chilli flakes and in it pops!


Next, we're going to need a tortilla wrap, as they were smallish I used 2 so me and Joe could have 1 each. Having a small pit break to stop the dog from barking at the neighbours outside I got to work on the tomato sauce. This is definitely the hardest part of the dish, only 2 ingredients needed!! I know, terrible right? I am not sure I can cope! Yet, in a small bowl, I added 2 tbsp of Tomato Puree and a splash of Balsamic Vinegar. Give it a good mix, you want to make sure it's slightly runny then add it to your tortilla base. I felt like an Italian wanting to shout mama mia as I was putting it on. This will always and forever remind me of being a kid going to a restaurant (the name totally escapes me now) but it was my birthday and I was allowed into the kitchen and create my own pizza! Obviously this will not be allowed nowadays but I think this is where I fell in love with cooking, The bustling kitchen, chefs shouting, the sweat, god I loved it, but that's a story for another day.


Your 5 minutes should be up now with the meatballs in the oven. Now all of the pre-done meat needs to go on top of the tortilla. Add ANY cheese you want! For this, I added some grated light cheddar and some goats cheese as I thought it would pair nicely with the balsamic vinegar. Once you're happy with it put it in the oven down a notch this time at 200c for 7 minutes.



 

The only thing I can say with this is don't slather the tomato puree on and make it "wet"! As soon as the wrap is browned it's ready but if it's wet it's veeerrryyy hard to take it nicely off the tray. For 1 of them, we needed 2 spatulas, 1 hand and a lot of luck but we made it!! YAY.


Now for the moment of truth, and oh my goodness I cannot express how much I enjoyed the tomato/balsamic vinegar base. I am doing all of my bases this way moving forward! It was mouth-watering sweet and tasty. You couldn't eat it like a normal pizza, you need a knife and fork but it was the best pizza I have done in a while! I think next time, I might add a few blobs of burger mayo to make it a proper cheeseburger pizza but that's for another day.


9/10! I can't wait to make this again!
